This 5-year-old straight bourbon whiskey, our first from Pine Bluffs, was made using a sweet mash process from 60% corn, 20% malted white wheat, and 20% malted barley. This has the classic softness of a wheated bourbon, plus distinctive notes of pine and dried grass. The palate has balanced oak, grainy softness, and notes of dried leaves and cocoa nibs. Like walking into a forest.
