Six Questions Your Advanced Fresh Concepts Franchise Financial Model Must Answer

We built this franchise unit financial model using our own research on premium sushi operations in high-traffic retail zones. Key assumptions like the 11% royalty and the $250,250 total initial equipment and build-out cost are pre-populated with researched data and are fully editable. This helps you evaluate the real-world potential of a unit doing $1.65M in its first year while accounting for high-end operating expense forecasting.

What is the profitability trajectory?

Profitability Timeline

This unit hits its stride quickly, reaching the break-even point by March 2026, just three months after launch. By calculating net profit after the 11% royalty and $16,000 monthly rent, the model shows you becoming profitable within the first year with an EBITDA of $554,000.

Boosting Unit Margins

  • Optimize seafood waste
  • Scale high-margin catering
  • Manage chef overtime
[dynamic_pic9]
How much capital is required and how is it allocated?

Capital Allocation

To get the doors open, you will need to fund $250,250 in hard startup costs plus a significant cash buffer, as the model shows a minimum cash requirement of $1.02M. This covers everything from the $6,250 franchise fee to the $90,000 leasehold improvements and initial kitchen equipment.

Major Startup Uses

  • Leasehold Improvements: $90,000
  • Sushi Theatre: $45,000
  • Kitchen Equipment: $40,000
  • Refrigeration Units: $25,000
[dynamic_pic10]
What is the return on investment?

Investment Returns

For this premium food service franchise, the internal rate of return (IRR) sits at 14.75% with a return on equity of 4.22. While the cash flow is strong, the high initial investment means the return on investment calculation shows full payback on the total capital occurs after year five.

Key Return Metrics

  • IRR: 14.75%
  • ROE: 4.22
  • Year 5 EBITDA: $1.369M
[dynamic_pic11]
What is the break-even point?

Break-Even Analysis

Your monthly break-even happens in month three, driven largely by the high fixed cost of $16,000 for prime location rent. Here's the quick math: you need to move enough $700,000/year sushi roll volume to cover that rent and the 11% royalty burden before you see a dime of profit.

Speeding Up Break-Even

  • Negotiate rent abatement
  • Pre-sell catering contracts
  • Tighten opening labor
[dynamic_pic12]
What is the cash runway and lowest cash point?

Cash Liquidity

The lowest cash point occurs in March 2026 at $1.02M, which includes your operating buffer and initial losses during the three-month ramp-up. You need to watch this closely because if build-out delays push your opening back, that cash runway shrinks fast and increases working capital pressure.

Protecting Cash Flow

  • Phase furniture purchases
  • Manage seafood inventory
  • Delay non-essential hires
[dynamic_pic13]
How do Low, Medium, and High scenarios change the outcome?

Scenario Sensitivity

Moving to a high-revenue scenario significantly changes your year-1 margin and helps you recover that $1.02M cash dip sooner. High-traffic locations make the difference here, especially if you can push catering platters beyond the base $150,000 forecast to hit the $3.2M year-5 target.

Driving High Performance

  • Target corporate offices
  • Upsell daily specials
  • Improve chef throughput

They're okay, but they're quite bulky.
I liked the design and overall application of these, but they don't fit my needs. They definitely work well at protecting my hands from freezing weather, but they are way too bulky for regular motorcycle use. In my opinion, I feel that these would be much more suited for a snowmobile or ATV. If you treat them as what they’re mostly designed for — ATV/snow-related riding or cold-weather utilitarian use — these gloves are a solid buy. They deliver warmth, weather protection, and decent control through the TPU windows. But if you put them on a fast street motorcycle or expect “motorcycle-glove” levels of control and feel — they’ll likely disappoint or even pose safety trade-offs. In that context, lighter and more control-oriented gloves would probably serve you better. The reason I'm docking stars is because they're marketed toward motorcycle users, and they;re very impractical. The durability seems pretty good, as I've taken them out and even had a couple of rocks/road debris hit the TPU windows with no scratches or punctures. They're not super comfortable to use at highway speeds, especially since they fit so loose, and they tend to press my front brake/clutch which is very dangerous. I personally cannot recommend this product for motorcycle use, unless you already have handguards, which will probably negate the need for these at all. Invest in some good heated gloves and/or heated grips, and I think you'll be much safer and better off in the end. For the price, I think this is a good value, but they're just not for me.

All ATV owners need these.
These gloves are fabulous. Anybody having fun on a ATV need these. With my hand warmer and these gloves, I don’t wear anything else on my hands. They are great.

handlebar mittens
Too big. If using during snow plowing they are a burden due to need to take hands off controls, and shift from forward to reverse. Might be okay if just riding around on trails, etc.

Good quality, not great on clutch
The quality of these is very good. They break the wind very well. Too well, actually. On my bike when going above 60 MPH they press hard enough on the clutch to be a problem. I'm sure I'll still use them but they won't be of any value on the interstate. It's possible to hold the clutch while using them but, for me at least, I don't have the strength to do it for my 45 minute commute. Unfortunately, the openings seem to fold up making it difficult to get gloved hands into them quickly, which is my reason for subtracting a star.
